What's in the glass
The martini glass doesn't do subtlety. No fuss, no hiding places - just cold, clean, honest liquid, on full display. Ours delivers on all three. Then goes further.
Start with the gin: a true Sydney spirit, built with the coast in mind. Smooth creamy, and just a little bit daring, with a wink of ocean salt cutting through bright juniper and zesty citrus. Coriander seed, angelica and orris root add structure underneath.
Then there's the real signature: Freshly shucked oyster shells find new life in Hickson House's distillation, adding natural minerals for a silky, rounded finish, whilst seaweed and old man saltbush bring savoury depth and a quiet nod to the coastline that started it all.
The pairing of Martini Bianco adds subtle botanic aromatics that bed majestically on the creamy gin base, while the quietest peep of Italicus adding a quiet companion to the citrus notes of the gin. Born in the rocks, served ice cold, easy-freezy.
